Chocolate and Banana Financiers

Ingredients

2 very ripe bananas
4 tablespoons Carotino Healthier Cooking Oil
4 tablespoons honey
4 tablespoons sour cream
6 egg whites
50g caster sugar
200g almond meal
50g self-raising flour
25g chocolate chips
Method
Puree the bananas, Carotino Heathier Cooking Oil, honey, sour cream and egg whites together in a blender. Transfer to a bowl and fold in the sugar, almond meal, flour and chocolate chips. Spoon into paper muffin cases and bake at 170º C for 13-15 minutes. Sprinkle with icing sugar before serving.
